Tavern at the Park
Restaurant cleaning specifications
Service to be provided 6 evenings per week
The areas of service will include :
lobby, bar area, main dining room, private dining rooms, public restrooms, waiter stations, elevator, staircases and kitchens.

1. Lobby –
• Floors will be swept and dust mopped (neutral cleaner will be used)
• All glass will be spot cleaned (this includes revolving door, valet door, and windows)
• All wood doors and wood panels will be cleaned, making sure to be smudge free
• Door frames will be high dusted
• Entrance carpet and mats will be vacuumed
• Coat room will be swept and mopped
• Air vents will be dusted
• Staircase will be vacuumed
• Handrails will be cleaned as needed
2. Bar area –
• Floor behind bar will be swept and scrubbed
• Refrigerator doors will be wiped down
• Trash will be emptied
• Countertop will be cleaned
• Wood floor will be swept and mopped (neutral cleaner will be used)
• Stool footrests will be cleaned as needed
• Light fixtures, picture frames and air vents, speakers and monitors will be dusted
• Booths will be wiped down as needed
• Mirrors will be cleaned
• Blinds will be dusted Mirrors behind bar will be cleaned only when bottles are removed by Tavern at the Park staff.

3. Dining room –
• All carpet will be vacuumed
• Booths will be cleaned as needed
• Picture frames, spotlights and light fixtures will dusted
• All ledges will dusted
• Table bases and chairs will be cleaned as needed
• All glass will be cleaned (includes engraved door and  wine cellar window pane)
• All wood panels, handrails and elevator door will be cleaned of handprints
• Stairs and handicap ramp will be swept and mopped
4. First floor private room –
• Carpet will be vacuumed
• Wood panels and ledges will be wiped down
• Light fixtures , TV, blinds, picture frames and air vents will be dusted
• Glass panes will cleaned
5. Second floor dining room
• Carpet will be vacuumed
• Picture frames, spotlights and light fixtures will dusted
• All ledges will dusted
• Air vents will be dusted
• Table bases and chairs will be cleaned as needed
• Elevator door will be wiped down
• All wood panels, handrails and elevator door will be cleaned of handprints
• Chimney glass pane will be cleaned
• elevator door will be cleaned and polished

6. Second floor private rooms
• Carpet will be vacuumed
• Table bases and chairs will be cleaned as needed
• Wood panels will be wiped down
• High reach ledges will be dusted
• Lamps, spot lights and TV will dusted
• Glass panes will cleaned
• Dividing glass door will be cleaned
• Air vents will be dusted
7. Waiter station –
• Floors will be swept and mopped
• Air vents will be dusted
8. Restrooms –
• Floors will be swept and mopped
• Mirrors will cleaned
• Wall tiles will wiped down as needed
• Marble counters will be cleaned
• Sinks, toilets and urinals will be disinfected
• Provided tissue paper and paper towels will be replaced.

9. Kitchen –
• Floors will be scrubbed and mopped
• Walls will be wiped down
• All mats will be washed
• All prep tables will be disinfected
• All sinks will be washed
• All table legs will be cleaned as needed
• Debris will be removed from drains
• All hoods will be wiped down outside and inside as needed
• Hood filters will be removed and run thru dishwasher as needed
• all stainless steel walls behind equipment will be cleaned as need

A partial list of the equipment that will be washed on a Weekly basis will be:

• 3 deep fryers
• range with 4 burners
• plate warmer ( salamander)
• char broiler
• double oven
• griddle with two burners and bottom oven
• griddle with top char broiler
• hand sin
• disinfect prep table
• wipe down all doors
• wipe down all shelves
• clean all empty drawers
• dust fridge air intake grill.
•  refrigerator doors
• carts will be cleaned
• exit door will be cleaned of hand prints and smudges
• hand sink
• walls from walk in coolers
• chicken roaster
• smoker
• double steamer
• range with 4 burners and bottom oven
• single oven
• tilting braising pan
• table with 1 compartment sink
• shelves
• mixer
• prep table
• metal racks as needed
• hand sink
• mop sink
• 3 compartment sink (legs and bottom)
• dish washer table
• ice machine ( outside only)
• bottle cooler ( outside only)
• employee area
• stair case (washed 3 times a week and mopped 4 times a week)
• hand rails daily.

Second floor Kitchen : Weekly

• 2 deep fryers
• range with 4 burners and bottom oven and griddle
• plate warmer ( salamander)
• char broiler
• prep table with coolers at the bottom
• coffee station
• ice machine (outside only)
